My favorite food as Japanese

Dear followers and readers, how are you?  I’m TOSHI, a Japanese woman.

Since I was writing a food report, article as a writer, I often asked, “What is your favorite food?”

I always answer “It’s Dashi, Japanese soup stock.” without hesitation. Because it truly is.

Dashi(出汁), Japanese soup stock, ordinaly made from kelp and dried bonito, I can’t live without it. I just can’t live.

Today I would like to talk about this.

Dashi(出汁), I can’t live without it

I have had the experience of giving up studying abroad and returning home, partly because I couldn’t easily find Japanese everyday foods, including authentic Japanese soup stock.

I didn’t dislike any kind of food, I can eat almost anything (Expect tarantula as food), so I thought it was just okay, but after a while, I found that it would be impossible to make quality soup stock made from kelp and dried bonito, or use it to make Japanese cuisine, I noticed that.

I couldn’t get the ingredients. At least I tried to find them.

I can eat anything, but if I don’t have it regularly, I feel like  I’m not myself.

Chicken soup is delicious when I’m healthy, but when I’m really weak, I want to eat hot udon noodles with good Japanise soup stock. Personally, I’m not good at white rice porridge.

With Dashi and okara, Japanese cuisine can be more healthy

Compared to other countries’ dishes, Japanese food has less oil and is lighter, but may have more salt. However, if you use quality Japanese soup stock, you can cook the finest dishes with a light taste less salt, and heavenly depth.

And it is said that kelp contains a lot of nutritions, including minerals for exsample Iodine can be expected to be good for your health, so it can be said that is healthy food.

My favorite simmered dish is Chikuzen-ni(筑前煮), a kind of chiken dish and vegetables. I love it, very delicious, I can eat chicken and vegetables together. I use ordinaly Japanese soup stock when I cook with it, but there is a recipe to cook it without Japanese soup stock, because you use chicken, and oil.

Yesterday, I made a simmered okara (おから soy pulp) with good Japanese soup stock and it is very delicious.

Okara is an excellent source of fiber. In Japan, it is sometimes mixed with hamburger steak, or cookie. 

The ordinaly Japanese soup stock uses dried bonito, so it may not be possible for strict vegetarians, but it seems that there are soup stocks made with kelp, dried shiitake (black) mushrooms, and vegetables, so why not check it out?

Your diet may change slightly, or even drastically.
