Dear readers, how are you ? It’s finally getting cooler, and I’m not a fan of heat, so It’s an improvement. My appetite is returning with tiny steps.

I’m really happy that autumn is almost here. It’s the most beautiful season for me. I like cool, fresh weather, and the autumn leaves are very beautiful.

There is the phrase “Autumn of appetite”.

In autumn, I always eat matsutake mushrooms, and “Dobimushi”, it’s one of my most favorite dishes,  I love it dearly.

“Dobimushi” with matsutake mushrooms! Chicken, shrimp, ginkgo, etc. are put in a small clay bottle with Japanese soup stock and cooked together, with the clay bottle steamed.

The aroma and taste of matsutake mushrooms blends perfectly with the taste of the other ingredients, resulting in a delicate and wonderful dish. The trefoil and squeezed sudachi are also nice accents.

I had eaten maitake mushrooms in a clay bottle in Kyoto, which was also very delicious. I ate “Dobimushi” with mushrooms steamed in Australia, and even though the taste wasn’t what I expected, it was still delicious.

Oh, I want to eat it so much that I am tearing up even as I write this!
